Located inside the fortified medieval town of Saint-Émilion, Le Cloître des Cordeliers is the former convent of the Franciscan monks established as Les Cordeliers during the 7th Crusade. Built in the 14th century, it was eventually left abandoned. But clever winemakers recognized the potential for the decaying monastery as a place perfect for aging sparkling Bordeaux wine. Made in the Champagne method, the AOC Crémant de Bordeaux ages in the labyrinth of quarries beneath the former monastery. Visits can tour the tunnels or just enjoy the refreshing white and rosé sparkling wines in the atmospheric garden.

The Saint-Émilion location is a bit smaller, but still offers an impressive selection of 50 different types of PDO cheese from all around France. A meal entirely of cheese might sound indulgent, but trekking up Saint-Émilion’s steep tertre will definitely earn the indulgence.
