OST Restaurant was opened steps away from the Place du Palais and Porte Cailhau in Bordeaux’s historic Quartier Saint-Pierre by Quentin and Sophie Le Borgne. Both owners come from restaurateur families, graduated from Vatel – the top-ranked hospitality school in France and notably among the best in the world, have worked in top Paris establishments such as the restaurants of Alain Ducasse, and even lived in Hong Kong where they opened a French wine bar. But Quentin and Sophie’s dream was always to open a gastronomic restaurant of their own in France.
Inspired by their life in Hong Kong and culinary adventures throughout Asia, the concept of OST was born. The couple carefully chose Bordeaux ultimately because of the city’s proximity to the ocean, both for the culinary haven land and sea offer up and their own personal enjoyment of the seaside.
Choosing a charming space in Quartier Saint-Pierre, the restaurant at 8 Rue Ausone is as warm and welcoming as the owners themselves.
The Menu
OST Restaurant is a bistronomique restaurant focusing on fresh, high-quality seasonal ingredients. The menu is designed seasonally to feature contemporary French flavors with surprising pops of Asian ingredients like ponzu or bird’s eye chili.
Guests choose from a menu of four starters, four main courses and four desserts that is regularly changed. Among the choices, there is a vegetarian option with no less dazzling flavors than the other menu choices. And not to worry if your French to English translation of Asian ingredients isn’t up to par. Both Quentin and Sophie speak fluent English.
What is most unique at OST Restaurant is that while the starters are designed for guests to choose individually as you would at any other French bistro, the main course is meant to be shared family-style and should be agreed upon by your entire party. Welcoming the concept, we had no issue quickly agreeing on several starters and a main course.
The carpaccio of red tuna (carpaccio de thon rouge) is a signature dish we couldn’t pass it up. Even though my friend isn’t a fan of spicy ingredients, she quite enjoyed bird’s eye chilies in the dish that are well balanced with the citrus flavors of the ponzu. Quentin also recommended we try the fried artichokes with a coppa ham and served with sriracha mayonnaise. Beautifully presented like flowers on the plate, the lightly fried artichokes were incredibly flavorful.
For our main course, we chose the veal stuffed with mushrooms and served over a bed of mashed potatoes with roasted oyster mushrooms. It came in a massive cast iron pan that kept everything hot as we dined leisurely. Every bite of the tender veal, mushrooms and creamy mashed potatoes was pure pleasure.
The desserts were no less innovative. OST’s signature dessert is their chocolate cookie with kalamata olives, candied nuts and salted caramel butter. The dessert has been so successful, it’s the one item you’ll always find on OST’s menu. And while a cookie with olives sounds a bit odd, it works in the most delicious and balanced way. The olive oil and kalamata olives that are used in the cookie recipe itself lend a salty contrast to the sweetness of the candied nuts and salted caramel butter topping the cookie.
